WHAT YOU WILL DO
Experience the essence of Mexican cuisine with Maíz: From grinding corn using traditional mills to preparing delicious tacos, tamales, huaraches, tetelas, quesadillas, and exquisite cornbread, all made with your own hands and pre-Hispanic utensils.
Immerse yourself in a diverse variety of flavors and discover the world of Mexican chili. Learn to make salsas in a molcajete and the classic guacamole while tasting our state’s most prized beverages: pox, tascalate, and pinole.

WHAT YOU WILL DO
You will prepare three different types of exquisite moles. The traditional mole poblano, ‘velo de novia’ (white mole), and a pink mole. From the roasting to the grinding and baking stages.
Tasting “pox”, a ritual drink, will be essential to spark our passion for the stove, the fire in the oven and the comal. Everything will come to life, connecting us with the ancient magic of Mexican cuisine.

WHAT YOU WILL DO
Discover the authentic magic behind tacos al pastor. From preparing tortillas and salsas from scratch, to becoming the king and queen of Tacos al pastor! You’ll embark on a culinary journey highlighting this iconic Mexican dish. You’ll learn to cook tacos al pastor on a traditional trompo and in your own kitchen, exploring classic pairings and essential techniques.
This experience not only teaches you to master tacos al pastor but also allows you to enjoy a shared meal, toast with Mexican traditional drinks and enjoy an exciting experience in a magical place at Posada del Abuelito.

Excursions, One-Day and Multi-Day Trips
We offer alternative excursions with local guides to discover the various facets and landmarks of San Cristobal de las Casas and Chiapas. You can experience the flora and fauna of the region, improve your knowledge of the Mayan, Zoque and Chol indigenous cultures, visit secluded archaeological sites, go on a tour to a nearby indigenous town, visit the natural wonders of the state or simply go off the beaten track.

Popular Activities
Cañón del Sumidero
and Chiapa de Corzo
The Cañón del Sumidero is a natural wonder of Chiapas. This excursion takes you on a boat up the river between natural walls with 90 degree tilt and cliffs up to 1,000 meters high! If you’re lucky, you can discover a variety of wildlife including crocodiles, monkeys and pelicans.
Agua Azul, Misol Ha
and Palenque
You’ll discover Agua Azul and Misol Ha, two beautiful waterfalls where you have the opportunity to enjoy nature and swimming. Then you’ll visit Palenque, the most famous Mayan archaeological site in Chiapas that had its glory days under king Pakal’s rule, with free time to enjoy the many monuments which are dispersed in the tropical jungle on the fringes of the Lacandón region.
Lagunas de Montebello
and Chiflon Waterfalls
Located south east of San Cristobal de las Casas, the National Forest area of Montebello Lakes consists of virgin forests and approximately 50 different colorful lakes with crystal clear water and amazing views. Then, as you travel from the Comitán llanos towards the central valley of Chiapas, the largest in the state, you’ll discover in the Chiflón a series of waterfalls from limestone formations. There, you’ll have the opportunity to hike or cool off swimming in natural pools.
San Juan Chamula
and Zinacantán
This is surely one of the most interesting excursions, culturally and historically speaking. You will visit two of the most famous indigenous villages of Chiapas not far from San Cristóbal de las Casas. You can see how these different Tzotzil-speaking communities have adapted to the the 21st century life, blending in an original way catholic and traditional Mayan practices.
Shuttles
We can provide private transportation to the Tuxtla Gutierrez airport at any time of day or night. We also offer daily departures to different parts of Guatemala with private shuttle and border crossing assistance. This is not only a good way to meet and exchange tips with other travelers on their way to the “country of the eternal Spring,” but also a practical way to avoid unreliable public transportation on the other side of the border where weather conditions and protests and demonstrations often block the roads.
- Shuttle to Panajachel leaves at 7am and arrives approximately at 6pm.
- Shuttle to San Pedro la Laguna leaves at 7am and arrives approximately at 7pm.
- Shuttle to La Antigua leaves at 7am and arrives approximately at 8pm.
- Shuttle to Quetzaltenango (Xela) leaves at 7am and arrives approximately at 5pm.
